Friday, September 29th, marked the national and international Food Waste Day. To mark the occasion, GS1 Denmark, as one of the partners in the University of Copenhagen's "SESAM 2030" project under European Researchers' Night, was invited to Frederiksberg City Hall. We participated alongside schools and students with the goal of presenting solutions on how we can become more sustainable in the food sector with the help of the younger generation.
Scientific and digital insight was the focal point among the solutions showcased by the 20 stands. GS1 shared a stand with 7th-grade students from Læringshuset in Høje Taastrup, for whom our own food waste expert, Mads Kibsgaard, acts as a subject mentor as part of their curriculum.
Minister for Food Jacob Jensen was the guest of honor for the day. During his visit to the stands, he gained firsthand insight into how students from Læringshuset use technology and smart 2D barcodes, such as QR codes, to combat food waste.
- That is brilliant, the Minister for Food exclaimed!
We couldn't agree more. These smart barcodes can, for example, provide consumers with information about climate footprints, recipes, and shelf life, and they can also automatically adjust prices based on product expiration dates—something the traditional 1D barcodes we know from supermarkets cannot do.

GS1's food waste expert, Mads Kibsgaard, who also holds the more formal title of Senior Sustainability & Business Developer, has been a guest lecturer and subject mentor at Læringshuset for the past four years and also participated in this year's Food Waste Day at Frederiksberg City Hall.
- It is both fun and educational to work with primary school children. They grasp digital solutions to everyday problems in a completely different way than adults do. Now in the fourth year of this collaboration, I am still constantly amazed at how quickly the students at Læringshuset can embrace even complex topics, such as the digitalization of barcodes and products, says Mads.
The students impressed the minister not only with their technological skills but also with their creativity in the kitchen. They served the minister a portion of freshly made pasta, created from "re-bread"—breadcrumbs that would otherwise have been thrown away.
The collaboration between Læringshuset, the University of Copenhagen, and GS1 Denmark is an example of how education and technology can play a crucial role in reducing food waste and promoting sustainability, according to Mads.
- Our collaboration with Læringshuset once again demonstrates that while standards may be considered complex, their value is clearly understood by both school students and ministers for food.
The day concluded with a speech and a pep talk from the minister, who praised the students' efforts and encouraged that their initiatives and innovative approaches be shared and supported more broadly.
